Meal 18- Barbeque Chicken Breast and Baked Potato

Sunshine and sixty-five degrees put us in the mood for some grilled goodness.  Unfortunately, the grill bit the dust in the winter storms.  Fortunately, there are plenty of contraptions out there to fake grilled goodness.  Sure, you lose the authenticity, but desperate times call for desperate measures….electric grill and microwave to the rescue!   

Ingredients: 3 chicken breasts, 3 medium/large potatoes, 1/2 pack fresh broccoli, a few baby carrots, barbecue sauce, margarine spread, sour cream, salt and pepper. 

Wash, scrub, and stab potatoes.  Pound on the chicken a little.  Spread a dollop of barbecue sauce on chicken breasts.  Wash and cut broccoli.  Put in bowl with a few carrots and a sprinkle of water.  Plug in electric grill.  Begin to microwave potatoes.  Start with 3 minutes, turn and add 3 more minutes, turn and add another minute or two if needed.  Cook chicken on grill.  It takes about 9 minutes.  I usually flip mine because the top side has a tendency to burn.  Microwave the broccoli and carrots for 3 minutes.  When the chicken is done, serve it up.  Add dollops of sour cream and margarine to the potatoes and a dollop of barbecue sauce on the grilled chicken for added goodness.

Aldi Price Breakdown: 3 chicken breasts-$3.00, 3 medium/large potatoes- 76cents, 1/2 pack fresh broccoli- 75cents, a few baby carrots-20cents, dollops-25cents = $4.98 for a fake grilled, yet gorgeous dinner for 4.
