Meal 19- Grilled Sausage and Crazy Grilled Potato Salad

Well that didn’t take long… a new member has joined our family.  He is a big, mean, green, grilling machine.  I realized that my 10% off coupon was expiring in a few days, so we would be losing money if we didn’t hurry up and buy this grill.  Since we dropped a few  bucks on the grill today, we didn’t splurge for fancy meat.  Instead, I thought I would see how the Hot Italian Sausages (from meal 17) would do on the grill.  Not surprisingly, they did splendid.  Paired with a crazy grilled potato salad it made for a pretty hot and wild meal!

Necessary ingredients: Hot Italian Sausages (or bratwurst if you are scared of hotness), buns, 1/3 bag of tiny golden potatoes, 1/2 bag of frozen edamame, about a cup of frozen corn, 1/4 jar of roasted red peppers, 1/4 chopped onion, 2 garlic cloves, olive oil, balsamic vinegar, dried rosemary, salt and pepper.

Wash and cut potatoes in bite-sized pieces.  Heat grill.  Prepare edamame according to package.  Mix potatoes, edamame, and corn together.  Chop onion and mince garlic.  Add about 1/4 cup of olive oil and balsamic vinegar to onion and garlic.  Add roasted red peppers.  Stir in with other vegetables.  Put the mixture on a large piece of foil.  Sprinkle with salt, pepper, and rosemary.  Put another piece of foil on top and fold up the sides.  Grill on medium heat for about forty-five minutes.  Flip every so often.  Add the sausages towards the end of cooking.  ***For a speed method, give the potatoes a jump-start in the microwave.  Just heat them a bowl with a little water for about 5 minutes and then proceed with the recipe.  I put a small drizzle of olive oil and balsamic over the crazy salad before serving.  It was nice.

Aldi Price Breakdown: Hot Italian Sausages (or bratwurst if you are scared of hotness) 5 for $1.99, 5 buns- 50cents or less, 1/3 bag of tiny golden potatoes- 60cents, 1/2 bag of frozen edamame -75cents, about a cup of frozen corn -25cents, 1/4 jar of roasted red peppers- 42cents, the other stuff- 20cents or less. = $4.71 for gorgeous grilled craziness for 4 (and lots of extra crazy salad to snack on)
