Tonight’s meal is a perfect example of how Aldi’s Special Buys can jazz up the nightly routine. What might normally be chicken with pasta, rice, or potatoes, instantly became a delicious Asian cuisine. I was feeling hungry so I used two packets of Thai noodles (a special buy item). They were tasty, but not as good as Thai rice noodles that I have previously purchased at Aldi. I also used the rest of the jar of Teriyaki Wok Sauce. So, this dish was extra sassy and saucy.
Necessary ingredients: 2 boneless skinless chicken breasts, 2 packets of Thai noodles, 3 pieces celery, 1/3 bag baby carrots, 1/2 jar Teriyaki Wok sauce, handful of peanuts.
Cut chicken breasts in pieces. Boil 3 cups of water with a few rounds of olive oil. Add the Thai noodles to boiling water. Simmer for 7 minutes and take off of heat. Begin cooking chicken with one round of olive oil in a skillet or wok. Chop the celery and baby carrots. Add to chicken. Stir in a handful of peanuts. Stir and cook a few minutes. Add the wok sauce. Stir and cook some more. If it is a little too saucy for you, just add a couple pinches of flour and briskly stir. If it is a little too sassy for you, then go home. Serve over or beside noodles.
