It seems like just yesterday that I was sitting in the big, velour, blue recliner, munching on a box of Chicken and a Biscuit crackers, while watching my mom work out with Jane Fonda on VHS. Yes, those were the days. While I did not get my mom’s work out ethic, I thank God that I got her cooking ethic. This meal is one of hers. It is simple, gorgeous, and a personal childhood favorite. It is also extremely (not) important that I mention that it tastes nothing like a Chicken and a Biscuit cracker. Chicken and a Biscuit crackers, however, are odd and tasty creations of their own.
Necessary Ingredients: Three Boneless Skinless Chicken Breasts, 1 can cream of something soup, 1 can of biscuits, 1/2 bag of frozen green beans, 1/2 cup milk.
Spray a baking dish with canola baking spray. Pre-heat oven to 375 degrees. Pound on chicken a little and place in a greased baking dish. Sprinkle chicken with seasoning salt and black pepper if you wish. Add one can of cream of something soup (mushroom is my favorite, chicken is runner-up, and celery is in third place). Fill soup can half way with milk. Pour milk over chicken. Add 1/2 bag frozen green beans. Attempt to stir. Cover and bake for about 30 minutes. Check chicken for doneness. When chicken is done, put biscuits on top. Increase temp to 425 degrees. Bake until biscuits are slightly brown….about 10 minutes. Serve!
Aldi Price Breakdown: Three Boneless Skinless Chicken Breasts- $2.75, 1 can cream of something soup- 59cents, 1 can of biscuits???I’m having trouble finding this on my receipt. I will go with 42cents to stay on the safe side, 1/2 bag of frozen green beans 75cents.= $4.51 for an easy, gorgeous meal for 4 that does not taste like a cracker.
