This gorgeous dish was cooked in twenty minutes. I would choose it any night over a cheap pizza. I shout a giant, “You are welcome!” to the husband. Part one: Risotto. I’ve never made risotto before. It was from a box, but it was tasty. Of coarse, the box was from Aldi. I don’t even know where I would find risotto in a regular super market. Part two: Shrimp scampi. Let’s face it. Shrimp scampi is straight from heaven. It can be put over pasta, rice, mashed potatoes (I hear), and why not…risotto? It was rich and more expensive than the other options, but extremely yummy.
Necessary Ingredients: 1 package frozen shrimp (I used the precooked, peeled, and deveined…basically the shrimp for the tired, worn out lady making dinner), 2 cloves garlic, olive oil, 2 tablespoons margarine, a couple squirts Dijon mustard, salt, pepper, 1 box four cheese risotto, 2 tablespoons parmesan cheese, fresh broccoli for four.
Boil 2 and 1/2 cups water. Add risotto package. Boil on medium high. Stir occasionally. Wash and cut broccoli. Steam in microwave by putting a few splashes of water over it and a plate. Heat for 3 minutes. Heat a couple of rounds of olive oil on medium heat with minced garlic cloves. Add 2 tablespoons margarine. Pull tails off of shrimp and throw them in. Add a couple squirts of Dijon mustard. Stir. Sprinkle lightly with salt and pepper. Pull risotto off stove when the liquid appears to be mostly absorbed. Add a couple of tablespoons of parmesan cheese. Stir. Serve it all up!
Aldi Price Breakdown: 1 package frozen shrimp- $3.69 , garlic, olive oil,margarine, parmesan, and dijon mustard- 20cents, 1 box four cheese risotto- $1.79, fresh broccoli for four- 75cents= $6.43 for an extra gourmet and gorgeous meal for 4 (plus my lunch tomorrow).
