Gourmet got gorgeous is back! What better way to re-enter reality than with some gorgeous guacamole prepared by a gorgeous Mexican? During our stay in Cancun, the entertainment staff shared a guacamole cooking lesson. Avocados are not only a super food, but are also sold at a super low price at Aldi. I believe that makes them a super-duper food. They are always under $1 and at times way under. I have messed with making guacamole, but have never had one this gorgeous. Can’t wait to use the tips in my own kitchen…stirring the green goddess while I daydream of my sweet, sweet, Caribbean sea.
Ingredients used: avocados, chopped onion, diced tomato, chopped cilantro, chopped fresh jalapeno, fresh squeezed lime juice, splash of tequilla, Worcestershire sauce, salt
Scoop flesh from avocados. The gentleman making this left a few seeds in the dip. He said that it helps to maintain the green hue. Mash. Add chopped onion. Smash. Add diced tomato and cilantro. Mash. Add jalapeno and the juice of a few limes. Smash. Add a splash of tequilla and a few rounds of Worcestershire sauce. Mash. Sprinkle with salt. Stir. Enjoy with chips, crackers, fresh vegetables, or straight from the spoon. I recommend traveling to the Yucatán peninsula to pair guacamole with their one of a kind tortilla chips. If you don’t have time for that, Aldi tortilla chips are fantastic as well. The price just went up to $1.19…but it’s still a steal.
